More "Curriness"!!!


Chettinad Chicken Curry

Ingredients:
Chicken :1kg/2.2lb 
Shallots/Pearl onions :1cup
Kashmiri Chilli Powder :1tbs 
Tomatoes :2nos (small, finely chopped)
Turmeric powder :1/2tsp 
Bay leaves :1no
Curry leaves :15nos
Coconut milk :1cup (extract from 1/2 coconut)
Salt to taste
Oil :1tbsp 

For grinding :
Cumin seeds :3/4tsp 
Fennel seeds :3/4tsp 
Coriander seeds :11/2tbsps 
Dried red chillies :7-8nos or (according to your spice level)
Pepper corns :1tsp 
Cardamoms :3pods
Cloves : 2nos
Cinnamon :1" stick
Curry leaves :1sprig
Oil :1/2tsp 
Green chillis :3-4nos
Garlic :5-8flakes
Ginger :2" piece
Poppy seeds :1tsp 

Method of Preparation :

1.Wash and cut chicken into medium sized pieces.
2.Soak poppy seeds in warm water for 10 mts.
3.Make a paste of the ginger, garlic, green chillies and poppy seeds. Keep aside.
4.Heat a frying pan to medium-high, add 1 tsp oil. When hot, add the cumin seeds, coriander seeds, fennel seeds, black peppercorns, cinnamon stick, cardamom, cloves dried red chillis,curry leaves, stirring constantly until lightly roasted. Cool and grind to a powder.
5.Heat oil in a large saucepan over a medium-high heat. When hot, add the bay leave.shallots/small onions and curry leaves and saute till transparent.
6.Add the kashmiri chilli powder and turmeric powder and just stir for few seconds.
7.Add the grounded ginger,garlic,green chillie and poppy paste. Continue to stir and fry for about 4 minutes, drizzling little water to prevent sticking. 
8.Add chicken and cook on high heat,stir until they are well coated with the masala for about 4-5 minutes.
9.Reduce to medium heat, add salt,tomatoes and combine well. 
Cook the chicken for 4-5 mts, uncovered, Now add the coconut milk and 1/2cup of water(if needed) allow to boil. 
10.Turn the heat to medium low, cover and simmer until the chicken is almost cooked, about 20-25 minutes. Open lid and combine well.
11.Finally add the ground masala powder and cook for 3 mts. Turn off heat.

Kerala Chicken Fry (Kozhi Porichathu)


Ingredients
  1. Chicken Drumsticks or Legs – 4 to 6 large ones (1 kg/2.2 lbs approx)
  2. Lemon Juice – 1 tbsp
  3. Oil – for shallow frying
Marinade
  1. Kashmiri Chilly Powder – 1.5 to 2 tbsp (Alter according to your spice tolerance)
  2. Turmeric Powder – 1/2 tsp
  3. Coriander Powder – 1 tbsp
  4. Black Pepper Powder – 1 tsp
  5. Ginger Garlic Paste – 2 tbsp
  6. Garam Masala Powder – 1/2 to 1 tsp
  7. Chicken Masala Powder – 1 tbsp (optional) [I use store bought Eastern or Niraparabrands]
  8. Lemon Juice – 1 tbsp
  9. Salt – to taste

核桃糊

Ingredients:
40g shelled walnuts
1Tbsp of rice flour or uncooked rice soaked for 1 hour
3 cups water
2-3 Tbsp sugar


Method:
1. Toast walnuts in oven.
2. Blend walnuts, soaked uncooked rice and water in chopper/blender till very fine.
3. Pour into a small pot, add sugar and bring to the boil.
4. If using rice flour, mix it with some water, then mix it into the blended walnut and sugar in the pot. Bring it to the boil.
5. Serve hot.

Healthy Breakfast Smoothies

Fruits and Cereal Smoothie
Ingredients
1. 1/4 cup banana nut crunch cereal
2. 1 ripe banana
3. 1 apple
4. 1/4 cup of berries (I used frozen strawberries and blackberries)
5. 1/2 cup milk 
6. 2 tsp honey

Method
1. Powder the cereal in the blender first
2. Now add the fruits,milk and honey and blend


Fiber One Cereal and Banana Smoothie

Ingredients:
Banana – 1 small or 3/4th of a large banana
Fiber One Cereal (Honey Clusters) – 1/4 cup
Milk – 1.5 to 2 cups (depending on the consistency you want the smoothie to be)
Almonds – 1 tablespoon (slivered)
Flax seed meal – 1/2 teaspoon
Procedure:
1. In a blender first add the cereal and almonds and powder it.
2. Then add the sliced bananas and milk and blend it smooth.

Banana Crunch Breakfast Smoothie

Ingredients:banana
  • 1 cup milk (I use skim or 1%)
  • 2 Tbs. of honey or sugar-free honey substitute
  • 1/2 cup granola
  • 1/2 cup of ice

Mock Boo Berry Brand Cereal Smoothie
Ingredients:
1 cup frozen or fresh blueberries
1 1/2 cups of Cheerios
1 single serve container of yogurt (vanilla, plain, or blueberry)
1 cup of ice
1 tablespoon of honey, or a packet of splenda or a tablespoon of sugar (whichever you prefer)
1 cup of milk (soy, regular, either one)


Directions:
Put it all into the blender and mix on low to medium speed until well-blended.

Cereal Killer
1/2 cup All-Bran Extra Fiber cereal
1 cup 1% milk
1/2 cup blueberries
1 tablespoon honey
2 teaspoons whey-protein powder
6 ice cubes, crushed

All Bran Field Berry Smoothie

Ingredients

  • 3/4 cup frozen or fresh mixed berries
  • 1 cup 2% milk
  • 1/2 cup vanilla yogurt
  • 1 (23 g) pouch All-Bran Buds* cereal singles

Directions

  1. Place fruit in blender container. Add milk, yogurt and All-Bran Buds*. Blend until smooth. Makes 500 mL (2 cups).

4 large strawberries
Half a cup of skim milk or Greek yogurt
1 ripe banana
5 ice cubes
1 tbsp. Special-K cereal
